24 hours to hell and back Brownstone bistro

In episode three of 24 hours to hell and back we follow a Cajun restaurant in the heart of Los Angeles, the owner Clive jackson who is broken, a man who’s dedicated not just to his work but to his community and family.

His desire to save at risk youth After his only son was robbed of his life while he was waiting for a bus the man held his son in his arms and blamed himself.

He wasn’t only about to lose his business but his family and his relationship with his wife and daughter this place needed saving.

Let’s get down to some of the issues

Big deals

  1. Cleanliness
  2. Guest first
  3. Respect
  4. Outdated system
  5. Temperature control
  6. Health standards
  7. Lack of training

Subtle issues

  1. Employees on their cellphone while on duty

I am more concerned with guest interaction then employees being on their cell phones

As it Gordon Ramsay sat down the first thing he noticed was No one greeting customers at the front door, staff openly on their cellphone and absolutely no engaging with the customers, they failed to bring out all the food at once and then you have the managers cold demeanor

The wings were cold, they served processed cheese and The presentation of the food was horrendous while the inside the kitchen was a whole different story.

As discussed in several of my blogs guests are a priority hence guest first remember guest service

  • Greet
  • Usher
  • Engage
  • Smile
  • Thank

E nd with a thank you

I am all for employees expelling energy while it’s slow so as long as its in a productive manner.

Examples every service job I’ve had weather it was

  1. Alcatraz
  2. Hornblower
  3. American outlet
  4. AMC
  5. Toys R Us
  6. Mars2112

I spent time engaging current and potential customers and guest. I try to entertain the guests waiting online those were some of the best moments.

You can also find other examples at Jekyll and Hyde club a theme restaurant in New York City where waiters and characters engaged in song and dance.

So if you’re the waitstaff and everything that needs to be done is already done be creative and engage guests

Cell phone usage

Do not use your Cellphone in public unless you are reaching out to potential customers if it’s an emergency go to a private location like the bathroom or the break room same as if your eating or smoking

Temperature control

Check the temperature inside freezer if you can’t see your breath or you can still feel your face it’s not that cold enough and you need to check the number on the panel.

With Cooked meat it’s important that you check the temperature do not under cook or over cook food parasites, germs and bacteria are attracted to certain temperatures make sure you read the guide lines.

First in first out When in doubt throw it out

Very important make sure everything is dated where you can see it, do not serve food that’s expired and before you serve food if it’s not something you would give to your family let alone your pet don’t serve it when in doubt throw it out.

The kitchen

Be sure to clean everything before you leave throw out the grease, clean out the vents and trays this could mean the difference between life and death a paycheck or law suit

Passion over paycheck

If you were working and you are not going to give it your best or show your interest for the job then leave.

Pos systems

It is the 20th century we are passed the era of writing by hand you have companies like toast, Presto and touch bistros

Renovate, Revamp and renew

Change the decor, create a new menu and renew your image. Remember Community is important, you’re not in it alone, get rid of dead weight and work with a team (team work makes the dream work)

Lastly take care of yourself and your employees get rid of dead weight

Minimum wage and higher education

For several years there has been this movement calling for a living wage that maybe reasonable for big corporation.

companies like Disney have raised their minimum wage voluntarily and continually providing discounts and services just for working for them Like tuition and housing.

Most companies provide benefits to its employees that don’t get taken advantage of

  1. McDonald’s
  2. Walmart
  3. Target
  4. Chipotle
  5. Verizon
  6. Home Depot
  7. Chase
  • So instead of staying stagnant and calling for $15 an hour when you can’t even serve food correctly Between expired parfait and soupy coffee, work at a place you’re passionate about whether it be marketing customer service hospitality and take advantage of their tuition programs are use our places you want to spend the rest your life at.

    Employ the homeless

OK I want to talk about something that holds true to my heart in June 2016 I had the pleasure and opportunity to learn and spend time with people in need and help addicts there is a nonprofit agency by the name of victory outreach ministries

they run several rehabilitation homes and training centers across the world. these programs that are available to assist people to get off drugs and alcohol they also provide them with on the job training and life skills to assist them to get their lives back on track.

    It’s done in 2 phases

    phase 1

they work with you for six months to year after you graduate you’ll be in you’ll get extensive studies, counseling and learn skills to go back out into the job market.

phase 2 which consist of a sober living environment where you begin seeking employment in the meantime you will have people who are going to work with you so that you won’t go back to drugs and alcohol.

Training centers are completely different, The urban training centers provide education and training for those who seek to go out to become missionaries and pioneers to build churches and rehabilitation homes and to assist those in need and to help stop gang violence.

These training centers are located in Strategic cities in the world.

Why do I speak of this you may ask It’s because in order to get the homeless off the street, people off drugs, children back in the arms of sober parents and gangs to die out we need to start doing this and with our immigrant population slowly fading away due to the trump administration farmers and other corporation may be able to take advantage of this rather than the immigrants that are desperate to Come into this country and work. if you’re a business and you need workers utilize services Provided by nonprofit organization you’d be assisting them in learning new skills that they can take too the workplace and begin to have dignity, self-respect and self worth.

This is a great opportunity to make a difference especially if you want to help the homeless people and addicts that take away from your business rather then give into it, by doing this you are helping veterans, homeless people, at risk youth and reformed people.

    Customer service

Let me start by saying I have been working in the service industry for over 10 years I have stayed in hotels and eaten at several restaurants, been to several movie theaters even worked at one.

With that being said I believe Customer/ guest service is one of the most crucial aspects of any business.

Today were going to go over several aspects of customer/guest service

    1. Acknowledge your guest when you first see them preferably as soon as they come in the door Embrace them with a smile and a warm welcome
    2. Be approachable, Post posture is important try not to lean never cross your arms
    3. Create a fun atmosphere for everyone be playful but not too playful be energetic do not be sloppy
    4. Always be objective and understanding to the customers concerns and complaints.
    5. Be consistent with customer rules of conduct and policy that has been set in place emergencies in special circumstances may apply
    6. When ever you make a mistake make sure you fix it do not get upset do not blame the customer or the messenger (cases of couriers)
    7. Be courteous, be mindful and be on time.
    8. Specifically for apps make sure you have a way for us to reach you I Purchased McDonald’s two weeks ago never received my order and I still haven’t gotten word back from them I have a better response time with lyft and Uber

    Escape from the bay

It is extremely expensive in cities like Los Angeles, San Francisco New York and Chicago. California residents have had to go through extreme lengths Just to pay the rent from living under the stairs, having multiple roommates or RV living. If the rental market isn’t regulated due to unaffordablity then we can end up in another housing bubble resulting in a crash, or people dying as a result of over crowding that’s a serious problem. People are already planning to move away from California to places like Washington, Oregon, Texas and Florida. The average employee is now shelling out more than 30% of their household income forcing them to work three jobs at a time in addition to having makeshift rooms which results fire and health hazards, living further away from their job which results in lateness, stressed induced illness, and health issues such as diabetes, heart disease and death.

rental scams are popping up every day people are posting daily Craigslist rentals or commuter beds and companies like AirBNB only encourages landlords to do the same. The best thing to do is to prevent price gouging is to regulate the rental market to ensure landlords are charging a fair amount for rent by giving tax incentive to landlords and business who work together. In conclusion There’s no reason for anyone to open a gofundme account to pay the bills

    Praxis

If you guys have read my blog you know that I am for apprenticeships versus jobs a job is an acronym for Just Over broke everybody needs work but I the same time if you’re in school it’s best to get a job that’s going to give you value where you can learn hands-on and work in the field in which you were studying which leads me to this apprenticeship. Praxis is a company that places the students or potential students in apprenticeships at start up companies without attending college first.

Praxis is only one solution among others as I said previously if you’re studying medicine work in a hospital or work as a home health aide while you go to college if you’re studying criminal justice you can work for security companies law firm’s work for a bounty Hunter whatever you do you want to make sure it matches what you’re studying So this way you’re learning more as you go along. Jobs are meant to provide not just monetary gain but it’s supposed to set you up for the future so you can build up your skill and value also for those of you were working on McDonald’s fast food restaurants movie theaters etc. etc. places like McDonald’s and target has tuition programs that you can take advantage of instead of drowning in student loans don’t get stuck Nor don’t be content with where you are if you’re interested in making money for the summer or looking for alternative ways of making money here are couple links to that as well.

    Wonolo App review

As summer approaches there is great opportunity to find some extra cash I’m gonna be discussing which apps you should definitely download if you’re looking for extra work for the summertime. First on my list is going to be wonolo. Currently if you live in New York City The jobs that you see are mostly general warehouse style jobs, events and delivery jobs. if you can make it to New Jersey there’s more jobs available out there. keep in mind since June is soon arriving there are going to be more jobs available and there is more of a potential for a possible permanent position in addition there’s a lot of incentives such as referral, work bonuses and a discount program. It’s a good app to download if you’re looking for extra income but before you do here are a few rules.

    1. Be on time
    2. You’re there to work not to be on your phone
    3. Dress accordingly
    4. Don’t try to be Superman listen to your body if you think this job is not for you don’t do it
    5. Cancellation are done in four hours in advance
    6. Be respectful

    Working with a disability

Writing this blog has to be the hardest one I’ve ever written because it hits close to home since I have cerebral palsy It was something I never would admit to my employers because it was something that I personally was ashamed about. Being the son of a restaurant owner I always took pride in the fact that I was working. another reason why I would never say anything is because when I did people talk to me like I was a child like I didn’t understand what they were saying that’s not something I wanted, I wanted to feel normal however as I’ve been reminded several times over the years there is no such thing as normal. I lack the strength, balance and speed so I am limited to somethings like riding a bicycle, lifting heavy objects, push-ups and fighting so the fact that I’m a security guard By night and postmates delivery guy by day is unbelievable. Despite my limitations I always aspired to move up And I never felt sorry for myself until I was denied the opportunity to move up after training three people that moved up before I did and this is where it gets hard to the point I became severely depressed that I felt so useless that entertained the idea of taking my own life Because of it. I’ve learned to accept who I am and realize that there’s people who are worst off then me and they are doing great things Which means although limited there are no limits Heck there was a guy named John Quinn who had cerebral palsy was in the military he even wrote a book about it may be impossible for some but I realize we get through if he did it anyone could.

    How to make a living

So one thing is for certain we need to start making a living and utilize our talents for example if you’re going to get a degree in art science political science automotive etc. make sure before you graduate you go out and look for those particular jobs because if you don’t you’re going to find yourself in a job that you’re overqualified for, so look for something where you can surround yourself with people who are in your profession weather its working at a restaurant or Security in a hospital, hotel or museum whatever your passion is you need to follow it, it doesn’t make sense to go to college, get a degree for you to then work at McDonald’s or Alcatraz as a cashier Unless its an apprenticeship or in management which should come before not after you graduate. while you’re in college or on break you should be working for jobs in your field or freelancing for your portfolio and don’t be shy or picky. People have wasted Time and money they have to pay back too then not do what they signed up for. So now if you’re studying business management, marketing or any job then here are some jobs That you can start doing
