24 hours to hell and back Brownstone bistro

In episode three of 24 hours to hell and back we follow a Cajun restaurant in the heart of Los Angeles, the owner Clive jackson who is broken, a man who’s dedicated not just to his work but to his community and family.

His desire to save at risk youth After his only son was robbed of his life while he was waiting for a bus the man held his son in his arms and blamed himself.

He wasn’t only about to lose his business but his family and his relationship with his wife and daughter this place needed saving.

I am more concerned with guest interaction then employees being on their cell phones

As it Gordon Ramsay sat down the first thing he noticed was No one greeting customers at the front door, staff openly on their cellphone and absolutely no engaging with the customers, they failed to bring out all the food at once and then you have the managers cold demeanor

The wings were cold, they served processed cheese and The presentation of the food was horrendous while the inside the kitchen was a whole different story.

As discussed in several of my blogs guests are a priority hence guest first remember guest service

I am all for employees expelling energy while it’s slow so as long as its in a productive manner.

Examples every service job I’ve had weather it was

  2. Hornblower
  3. American outlet
  4. AMC
  5. Toys R Us
  6. Mars2112

I spent time engaging current and potential customers and guest. I try to entertain the guests waiting online those were some of the best moments.

You can also find other examples at Jekyll and Hyde club a theme restaurant in New York City where waiters and characters engaged in song and dance.

So if you’re the waitstaff and everything that needs to be done is already done be creative and engage guests

Cell phone usage

Do not use your Cellphone in public unless you are reaching out to potential customers if it’s an emergency go to a private location like the bathroom or the break room same as if your eating or smoking

Temperature control

Check the temperature inside freezer if you can’t see your breath or you can still feel your face it’s not that cold enough and you need to check the number on the panel.

With Cooked meat it’s important that you check the temperature do not under cook or over cook food parasites, germs and bacteria are attracted to certain temperatures make sure you read the guide lines.

First in first out When in doubt throw it out

Very important make sure everything is dated where you can see it, do not serve food that’s expired and before you serve food if it’s not something you would give to your family let alone your pet don’t serve it when in doubt throw it out.

The kitchen

Be sure to clean everything before you leave throw out the grease, clean out the vents and trays this could mean the difference between life and death a paycheck or law suit

Passion over paycheck

If you were working and you are not going to give it your best or show your interest for the job then leave.

Pos systems

It is the 20th century we are passed the era of writing by hand you have companies like toast, Presto and touch bistros

Renovate, Revamp and renew

Change the decor, create a new menu and renew your image. Remember Community is important, you’re not in it alone, get rid of dead weight and work with a team (team work makes the dream work)

Lastly take care of yourself and your employees get rid of dead weight

McDonald’s business news

A 32 week old pregnant woman from Canada who stopped at McDonald’s for a caffeine rush got more then what she expected when she ordered a latte from a McDonald’s drive-thru in Alberta, Canada

She drove off and took a sip, it tasted funny and her mouth burned luckily she a bottle of water in her which she used to rinse out her mouth she went back and informed the manager about the state of her coffee.

It turns out the coffee machine which was being cleaned and the milk supply line was connected to cleaning solution which caused the cross contamination.

Both mother and child are expected to be okay, McDonald’s apologized and is reviewing its cleaning practice.

Given the fact that I have had massive food poisoning on more then several occasions And considering The fight for 15 movement I have to say that most of the employees need more training on food handling.

First in first out (food fight)

Rotation is important in food handling I have spoken about this before last time it was but temperature granted this is not the first time I had a parfait that was not up to par the last one I had gave me food poisoning now today I’m going to Talk about rotation Today is July 30 this is food handling 101 Alcatraz landing in San Francisco had a better understanding of this then McDonald’s.

It’s important to talk about FIFO rotation system in order not to poison anybody so now it’s time for retraining so here we go

A simple system everyone needs to follow to the T whenever you are distributing food remember what you put in for this week you take out the next dates are important and when in doubt throw it don’t serve food you wouldn’t eat yourself or give to family and friends

Let me start by saying I have been working in the service industry for over 10 years I have stayed in hotels and eaten at several restaurants, been to several movie theaters even worked at one.

With that being said I believe Customer/ guest service is one of the most crucial aspects of any business.

Today were going to go over several aspects of customer/guest service

  1. Acknowledge your guest when you first see them preferably as soon as they come in the door Embrace them with a smile and a warm welcome
  2. Be approachable, Post posture is important try not to lean never cross your arms
  3. Create a fun atmosphere for everyone be playful but not too playful be energetic do not be sloppy
  4. Always be objective and understanding to the customers concerns and complaints.
  5. Be consistent with customer rules of conduct and policy that has been set in place emergencies in special circumstances may apply
  6. When ever you make a mistake make sure you fix it do not get upset do not blame the customer or the messenger (cases of couriers)
  7. Be courteous, be mindful and be on time.
  8. Specifically for apps make sure you have a way for us to reach you I Purchased McDonald’s two weeks ago never received my order and I still haven’t gotten word back from them I have a better response time with lyft and Uber

If you’re in the food and beverage industry it is important for you to not only listen to your customers but to check your product if you know health and safety rules such as cross-contamination, contamination and temperature control then you should know that if your product is not up to standards

for example I recently started by a franchised coffee shop on my way home and I had bought a parfait before opening I noticed it was not as thick as usual as matter fact was very liquefied so I try to get another one of the two that were left and same thing it was liquefied this is an indication that it is a temperature issue and is no longer viable for consumption so the manager gave me a fresh parfait and put the two that I had just given him back on the shelf. Don’t put food that’s been returned to you back on the shelf.

Gordon Ramsay’s to hell and back episode review

In this very first emotional premiere of Gordon Ramsay’s to hell and back we see the transformation of Bella Gianna’s a restaurant in Congers, New York and deal with important issues that strike small business owners like immediately spoilers ahead let’s dive into it. Now the first thing I noticed was the owner Vinni who was suffering from A severe state of depression after the loss of his brother in law and the declined of his business. He Felt like he failed his parents who were the ones keeping the restaurant afloat, His level of anguish and resentment showed in the way he treated customers, his employees and his family, The chef had ultimately given up due to stress brought on by Vinni. The Decour was old and the kitchen was not up to code The restaurant had gone through hell with the help of Gordon Ramsay,The family, staff and crew a simplified menu, revamp, rebranding and renovation of the restaurant he managed to turn it around in just 24 hours while working together with ultimately it was up to Vinni To maintain this new style. Now I want point out a couple things.

  1. It is just as important for an employee to maintain order as it is for the employer. Make sure that you maintain your space and disregard orders deemed impulsive or illogical continue to follow food and safety rules
  2. As an employee of a small business understand that you are not just an employee but a partner and member of the family and to treat it as such even if that means tough love don’t just complain but maintain.
  3. Take initiative to improve company standards bringing your own style and flavor and make that difference.
  4. As an Owner listen to the employees and your customers change what needs to be changed and if you are past the point of no return and are bleeding money And can’t get Gordon Ramsay or celebrity to help you I urge you to set up a crowdfunding campaign and offer incentives to those who partner with you.
  5. revamp And rebrand your restaurant invite members of the community as well as influencers that will help you along your journey
  6. After you have revamped, Rebrand and renovate Use social media and sites like meet up’s to invite more customers to dine at your restaurant
  7. always remember you’re never alone whether you’re in business or in life so talk to someone about your struggle. Everyone fails in life but life is as long as you keep it the opportunity to rise above failure is nearby so don’t give up.

this comes days after Roseanne Barr Had tweeted out offenses to Obama administration Valerie Jarrett claiming she was the love child of Muslim brotherhood and planet of the apes. Twitter responded with hilarious Memes, gifs and comments while Tariq Nasheed responded to the chains PR stunt by settling out court for 80 wings and curly fries. Buffalo Wild Wings CEO did respond with an apology for the offensive tweets. I don’t know, if you ask me maybe this might be a result of an altercation with Tommy. If you go to the restaurant ask for Tommy I believe he works in the back of the kitchen and is responsible for the sauce, he’ll take good care of you And if you see Melania tell her everyone’s looking for her
